The Wine: Bianco Pet Nat 2019 Folicello Bianco is a fresh, sweet-smelling, sapid and harmonic white natural wine characterized by a delightful floral scent - a blend of Montuni (50%), Pinot (25%), and Trebbiano (25%) grown organically. It's made with the 'Metodo Ancestrale' technique, also known as Pet Nat. The wine is bottled with all its yeasts and undergoes a second fermentation in the bottle, developing a natural effervescence (frizzante). Yeasts eventually eat up all the sugars and then deposit at the bottom of the bottle continuing to give a typical scent to the wine. The lees - dead yeasts - that we find in a bottle Folicello Bianco is proof of the vitality of this wine. Folicello Bianco Pet Nat is excellent with appetizers, pasta, rice, white meat, and cheese. The Producer: Folicello Folicello is the brainchild of Antonella and Marco, who started the winery in the 80s. The estate is located in Castelfranco Emilia, near Modena, Emilia-Romagna region and it's certified organic.
